PRAWN BIRYANI


Ingredients:

  • Prawns                         1kg
  • Rice                             ½ kg
  • Onions                         2
  • Hot spices                    1tbsp
  • Yogurt                          250grams
  • Lemons                        2
  • Red chillies Powder      2 tbsp
  • Turmeric Powder          1 tsp
  • Curry leaves                 few
  • Mustard seeds              ½ tsp
  • Bay leaves                    4-5
  • Black cumin seeds        ½ tsp
  • Green chillies                4-5
  • Coriander leaves           ½ a bunch
  • Ginger / garlic paste      2 tbsp
  • Salt                              to taste
  • Oil                                125gm


METHOD:-

  • Take water, salt and black cumin seeds in a pan and boil these.            
  • Now at previously soaked rice and par boil. Then sieve the rice and keep on a side 
Put prawns, salt, ginger/garlic paste and lemon juice in bowl and mix well. heat oil in a pot and cook this mixture in it for 2-3 minutes.
  • In bowl mix yogurt, red chilies hot spices, turmeric powder, and salt. Add this mixture in onions mixture and fry till oil come on the surface. Add prawns and cook for 3-4 minutes.
  • Heat oil in a fry pan and add mustard seeds and curry leaves for tempering. Layer a port with sum of the prepared oil and then top it with a layer of prawn mixture. Now add all the rice. Layer the reaming prawn mixture on top of the rice.
  • Spread chopped coriander leaves, lemon juice and the remaining oil on the top of the prawn mixture and keep on dump.

Serving suggestion:-
   
Delicious PRAWN BIRYANI is ready. Serve with raita and salad.


BASIL CHICKEN RICE

Ingredients: 

  • Boneless Chicken                       200 gm
  • (Cut into small pieces)
  • Rice  (boiled)                              2 cups
  • Chinese Salt                               1/3 tbsp
  • Salt                                             to taste
  • Basil                                           ½ cup
  • Tomato                                         1
  • Spring Onions                              2
  • Green Chillies                             3-4
  • Chicken Cube                              1
  • Eggs                                            2
  • Garlic                                           4-5 cloves
  • Black pepper                                ½ tsp
  • Soya sauce                                  4 tbsp
  • Oil                                                4-5 tbsp



Method:-


  • Heat oil in a pan.
  • Add chicken pieces and fry till they change colour.
  • Now add eggs, black pepper, salt, Soya souce, chicken cube, tomato,garlic and chopped green chillies and fry these.
  • Add Chinese salt and basil to the chicken pieces after they are properly fried.
  • Mix the boiled rice in the mixture.
  • After cooking for 5 minutes, mix chopped spring onion in this.

Serving suggestion:-
   
Delicious basil chicken rice is ready.Serve with raita and salad.




BOMBAY BIRYANI


Ingredients:-

  • Meat (Chicken, Beef, Mutton)                     500 gm
  • Rice    ( Soaked for 20 minutes)                 500 gm
  • Onion  ( Medium, sliced)                            250 gm
  • Tomato                                                       250 gm
  • Yogurt ( Beaten)                                        250 gm or 1 ¼  cup 
  • Ginger paste                                               2 tbsp
  • Garlic paste                                                2 tbsp
  • Oil/ Ghee                                                    250 ml or 1 ¼  cup
  • Biryani masala (any one company)             01 Packet

Directions:-


·        Heat the oil / ghee, fry onion till light brown.
·        Add meat on medium heat for 5 min. for beef/ mutton, add 4-5 cups of water and cook on low flame until the meat is tender ( water is not required for the chicken). Add tomatoes, ginger, garlic, yogurt and biryani masala and cook on low heat for 10-15 minutes;.
·        Boil in a separate pan take 12 glasses of water, 3 tbsp of salt and boil the rice until 3/4 done.

Layer:-

·        Make at layer of half the rice, put layer of meat and cover with second layer of rice.
·        Zarda colour and kewra essence as per need.
Simmer:-

·        Simmer the rice for 5 minutes on high flame. Reduce the flame and cook for another 10 minutes.

Serving suggestion:-
   
Delicious BOMBAY BIRYANI is ready. Serve with raita and salad.

CHICKEN ROAST


Ingredients:
    • Whole chicken                      1
    • Red chilli paste                      1 tbsp
    • Crushed black pepper           1 tbps
    • Garlic paste                           1 tbps
    • Turmeric paste                       1 tbps 
    • Hot spice powder                  1 tsp
    • Vinegar, Salt                          as required
    • Yellow food colour                as required
    • Oil                                         tbsp
    • Lettuce leaves                        as required
    • Tomatoes, Onions                  as required 

Method:
  • Place chicken in a bowl and add red chili paste, black pepper, garlic paste, turmeric paste, hot spice, vinegar, salt and food colour to it.
  • Mix well and keep it for 1 hour for marinating. Put the marinated chicken on a grill in the microwave.
  • click option in microwave oven and cook the chicken for 40  minutes.
  • Apply oil on chicken with the help of brush and keep it for 15 more minutes in the oven.

Serving suggestion:-

Garnish the chicken with salad leaves, onions and tomatoes before serving.

CHICKEN STEAK


Ingredients:

·        Chicken fillet                       6              
·        Honey                                3 tbsp                                                    
·        Lemons                              2                        
·        White vinegar                     2 tbsp              
·        Soya sauce                         2 tbsp                   
·        Mustard powder                 1 tsp         
·        White chilli powder             1 tsp    
·        Salt                                     to taste                                
·        Oil                                      1 tsp                                

Method:

  1.        Use a steak hammer to flatten the chicken spices.
  2.        In a bowl, mix the chicken with all the  spices throughly, and leave to rest.
  3.        Heat a pan and put a lilltle bit of oil on it.
  4.        Place the marinated chicken pieces on the pan.
  5.        Cook the chicken pieces for 2-3 minutes on either side.
  6.        Once golden brown, add a splash of water and immediately remove from the pan.

Serving suggestion:-

  Delicious chicken steak is ready to be served hot.

How to Make Kunna

 Ingredients:
    • Mutton                                    1/2 kg
    • Onions                                   Ginger/ garlic paste
    • Wheat flour                           as required
    • Ground coriander seeds        1 tsp
    • Cumin seeds                           1 tsp
    • Red chilli powder                   1 1/2 tsp
    • Turmeric powder                    1 tsp
    • Salt                                           to taste
    • Clarified butter                        1 cup
  Method:
  • Heat clarified butter in a pot and add chopped onions.
  • When the onions are slightly golden, add ginger/garlic paste and then add mutton and cook till it changes colour.
  • Add salt,ground red chillies, turmeric powder, coriander seeds and cumin seeds and mix well. Add water to tenderize mutton and let it cook.
  • In a bowl make a thick mixture of water and wheat flour.
  • when the meat is tender, add the wheat flour mixture to it and let it cook till thick..
  • Kunna is ready. 
              Serve hot with naan,salad and raita.
